These are so easy to make - especially if you already have leftover potatoes. They taste like a loaded baked potato but better as the panko gives them extra crunch on top. You could lighten these up by using chicken stock instead of butter and milk, but I wouldn't skip the bacon. Little bits running through these potatoes makes them pop. You can assemble these and freeze. Then when you're ready for a quick side dish you can bake them frozen.
