This dish is a one-pot wonder. Full of vegetables and loaded with proteins it's a healthy and satisfying meal. You can make a large batch and freeze the left-overs. It also is perfect as a kid's school lunch in a thermos on a cold day.

It was very savory, but it seemed to needed more of a meat that was chewy like chicken in my opinion.
