Raspberry Preserve Cookie Sandwiches

Valentine's Day is the expression of love. What better way to express love than with a rich butter cookie stuffed with sweet raspberry preserves. The dough can be made well in advance (frozen for a few months or refrigerated for a few days) and then baked when needed. Make sure the cookies have fully cooled before spreading the preserves. Placed in an attractive box, a dozen of these makes a perfect Valentine gift! Student cookies are to your left.

I didn't think the jam would be good with the cookie but it gave the cookie more flavor and was very good

These cookies were absolutely amazing. The jam had a unique flavor and the cookie itself was great. There was A LOT of powdered sugar (my only regret.) But overall, it was fabulous!
