It is still pretty warm here in Burbank in October - but I don't care. I will eat this soup in the heat because it is so good and very filling. I like using chicken for the meatballs as it is healthier than traditional beef and pork meatballs but also because in this soup it really doesn't matter. There are so many other flavor elements going on here that chicken works just as well. Italians use escarole as the leafy green in this soup but if you have a hard time finding it, which I do sometimes, spinach works just as well. Top with cheese and some fresh lemon juice and this is a complete meal!
