Chicago-Style Deep Dish Pizza

The crust is what makes a deep dish pizza different from the pizza we are traditionally used to. First off there is more of it. Second, this recipe calls for cornmeal and lots of butter in the dough adding another layer of flavor and texture not common for basic pizza dough. The trick is to put the cheese on top of the dough and the sauce on top of that. A hot, hot oven secures a crispy crust so that the center is not soggy. One slice of this pizza is extremely filling. Served with a side salad it's a substantial dinner.
