Roasted Tomato Soup

It is raining now, which for Burbankians is a blessing. The weather makes the perfect backdrop for this week's dish. Roasted tomato soup is super healthy and not hard to make. I like to roast vegetables whenever I have excess or when they look like they are about to go south. After roasting, I puree them and put them into containers and freeze them. Then whenever I feel like roasted tomato soup I pull the veggies out of the freezer, add some chicken stock and seasonings, grilled some cheese sandwiches and I have the perfect cozy comfort food.

I loved this dish!! The grilled cheese was very good with the soup. But I feel like the soup was a little chunky.
