This is a first for me. I always think about making eggs for dinner, but I get resistance at home when eggs appear on their plates. Last night, no resistance and my son asked for seconds! This is super easy and full of protein. Better yet, it makes a great "Meatless Monday" option as most of these ingredients can be ready in your freezer or pantry. Adding avocado would make this stellar.
