This is a perfect way to get more veggies into kids. I made this for my period 3 class today and they legitimately loved it! And it's mainly vegetables!! Of course to have some crunchy pita bread crisps nearby helps as that's the vehicle to get the dips into your mouth. I used both Greek flatbread (on the left) and whole wheat pita (on the right). Cutting the veggies super small in the "salsa" is key to getting a good balance of flavors. With grilled lemon-garlic chicken, this could be a complete meal!
