This is my favorite way to make an omelette. I always struggle with flipping a thick omelette so I made an egg batter thin enough to resemble a crepe. It's much easier to flip and it's not as "eggy". You can fill them with anything. They sort of look like burritos minus the tortillas. We are using beans, tomatoes, cheese and some spices, but you could try cheddar cheese, bacon, mushrooms and tomatoes. These are good for breakfast, brunch or lunch.
